I’m a busy working mom, but here’s the thing: You always need to make time for your baby and a healthy diet. I’m not on a diet high-horse (I’m a Gerber baby myself) but nowadays, my husband and I rarely eat packaged foods including canned foods. So we are trying to do the same for Baby. Loosely based off of the ramen I had while studying abroad in Osaka, Japan, I came up with this cheap dish during my impoverished years as a university student in the States. Please don’t mistake this for being authentic Japanese ramenit is certainly not that. But it kind of resembles what I ate back in the day. It’s fairly nutritious, filling, and cheapI hope you guys try it out. Ingredients: -1 package of instant ramen noodles (preferablyOrientalflavor) -1 egg -1 handful of baby spinach (or regular spinach) -1 green onion, chopped (optional) -pepper and coriander to taste
